Greek Orzo Salad - A Summer Favorite
Greek Orzo Salad
A delicious, refreshing summer salad that pairs well with most grilled meats or can be a meal in itself.
Salad Ingredients
1 (16 oz.) Box Orzo Pasta, cooked al dente
1/2 lb. Dried Cranberries or Cherries
1/4 c. Pine Nuts
1 lb. Baby Arugula, washed and drained
3 T. Basil, fresh and chopped
2 c. Feta Cheese. crumbled
Dressing Ingredients
Juice of 4 lemons
1/2 c. Extra Virgin Olive Oil
1/2 tsp. Salt
1/2 tsp. Pepper
1 tsp. Garlic, minced (optional)
Directions
Combine cooked pasta, cranberries or cherries, pine nuts, and feta cheese. Toss to mix. Make dressing and pour over pasta. Toss to combine and refrigerate. When ready to serve, drizzle a little more olive oil and lemon if needed.
